Oats Dosai




This is a very simple and healthy dosai. Today I made this for breakfast. I am sending this to Sri's Breakfast event and Padma's Dosa event.

Ingredients:

Oats - 2cups
Dosai Batter - 2cups
Onion - 1
red chilli- 2
Salt

1.Mix all the ingredients.
2.Add water and make it into a batter like the dosa batter.
3.Make dosai and serve hot.

Vegetable Omlet

Egg - 2
Onion - 1
Bell Peppers - 1/2cup
Carrot - 1/4th cup
Tomato - 1
Chilli Powder - 1/2 tbsp
Turmeric powder - a pinch
Salt
Oil


1. Cut the onions and tomato.
2. Beat the egg. Add salt,chilli and turmeric powder and mix well.
3. Ina pan add little oil and then add the bell pepper,carrot,onion and tomato and mix.
4. Heat a pan and add little oil and pour the mixture and cook well.
5. After 2mins turn the omlet to the other side to cook it.
Serve Hot !!

Roasted Vegetables and Penne Pasta

Ingredients:

Penne pasta - 2cups
Beets - 1
Tomato ketchup - 2tbsp
Carrot - 1
Garlic - 2pods
Cauliflower - 1
Red hot chilli - 1
Olive oil
Salt
chilli flakes

1.In a pan add oil and then add garlic and then put the vegetables.
2.Fry well. And close with a lid and keep it for 10mins.
3.By that time the vegetables will be cooked and little roasted. Mix it and close the lid for another 5mins.
4.Cook the pasta as per the package instructions.
5.Add salt to the cooked veggies and then add the pasta to the pan.
6.Mix well with the vegetables and then add the tomato ketchup and mix well.

Let it stand for another 5mins and serve with chilli flakes topped with it.

It was really spicy.ufff...

Peas and Tomato Thokku

Ingredients:
Tomato - 2
Peas - 1cup
Onion - 1
Ginger - 1/2"
Garlic - 2 cloves
Chilli powder - 1/2 tbsp
Coriander powder - 1 tbsp
Mustard
Urad dal
Oil
Salt

1. Heat oil in a pan and add mustard and urad dal.
2. Grind the ginge and garlic and make a paste.
3. Add the paste to the pan.
4. Add the onions to the pan and saute till golden brown.
5. Add the tomatoes and cook them well.
6. After it becomes mushy add the chilli and coriander powder.Add peas and mix well.
7. Cook until the raw smell goes away.

Tofu and Veggies Wrap

Ingredients:

Extra firm tofu - 1 pack
Soya sauce - 1tbsp
Chilli flakes - 1/2tbsp
Lemon zest - a pinch
Olive oil


Carrot - 1/2cup
Potato - 1/2cup
Dried parsley - 1tbsp
Cumin seeds - 1/2tbsp
Chilli and Coriander powder - 1tbsp each
Salt
oil

Tortilla - 2

1.For making the tofu mix the soya sauce,zest,salt and chilli flakes.
2.In a wide pan add olive oil and then the cut tofu and fry for 2mins.
3.Then add the mixture and fry well. After all the liquid has been obsorbed take it away and let it cool.

4.In the same pan add little more oil and then add the cut carrot first and fry for 3mins.
5.Then the potatos and the parsley ,salt and powders.
6.Mix well and close with a lid and let it stand in medium heat for about 10mins.
7.It will be almost fried by now and mix well.

8.Heat the tortilla. I suddenly thought of spreading some hummus on top of it. So I took a tablespoon of hummus and spreaded on tortillas and then the veggies and then rolled it and cut to 2pieces.

Hummus

Ingredients:

Chickpea - 1cup
Garlic - 2pods
Lemon juice - 2tbsp
Yogurt - 1tbsp
Cumin seeds - 1/2tbsp
Salt

1.Blend all together in a blender and cool and serve it.

Chickpea and Kale Soup

Ingredients:

Kale - chopped - 1cup
Chickpea - 1/2cup -cooked
Carrot - 1/2cup
tomato - 1
Onion - 1
Black pepper powder - 1tbsp
Cayenne pepper - 1/4tbsp
Paprika - 1/4tbsp
Olive oil
Salt

1.In a pan add oil and then saute the garlic for a min.
2.Then add onion and saute for 3mins.
3.Then goes tomato and cook until mushy.
4.Add all the powders and then the chickpea.
5.Add salt and a cup of water and let it boil for 5mins.
6.then add the chopped kale and add more water till the kale is immersed in the water.
7.Cook until the kale is soft and let it stand for about 20mins.

Green Gram Dal Dosai



This is new try since I dint have Urad dal at home for making dosai.Generally its dosai or idly we eat for breakfast and dinner. Specifically my husband cannot be without eating dosai.When I checked that the batter was over I thought i will soak some for making. But then realised that I dint have Urad dal. Then thought why not try it with Green gram dal and made this. We both liked it.My husband generally doesnt try eating new things but he liked it.

I am sending this to the Breakfast Series Event started by Sri and Padma's Dosa Event.


Ingredients:

Green Gram Dal -1 cup
Idly Rice - 1cup
Onion - 1
Carrot - 1/2cup
coriander - chopped - 1/cup

1.Soak the dal and rice seperately for 4hrs.
2.First grind the dal and shift to a vessel.
3.Then grind the rice and mix with the dal.
4.Add salt and let it ferment.I kept it for around 6hrs or so.
5.Chop the onion,coriander and carrot and mix in the batter..
6.Heat the dosa pan and make dosas.

We had with tomato chutney.





Peppers and Carrot Rava Idly

Iam sending this to AFAM Bell Pepper event by Priya and Maheshwari.

Ingredients:

Rava - 2cups
Curd - 11/2 cups
Bell Pepper - 1
Carrot - 1/2cup - grated
Channa dal - 1tbsp
Mustard
Oil
Salt

1.In a pan add little oil and then add mustard and channa dal.
2.After it pops add the bell pepper and saute for 3mins.
3.Add the rava and fry for 2mins.
4.Then add grated carrot and mix well.
5.Shift to a vessel and let it cool.
6.Then add the curd.
7.If its very thick add water and make it to a consistency of normal idly batter.
8.Leave it for an hour.

Vegetarian Chilli

Ingredients:

Chickpea - 1cup -cooked
Zucchini - 1
Bell pepper - 1
Tomato - 2
Onion - 1
Garlic - 2 pods
Halabeno peppers - 1
Cayenne pepper - 1tbsp
Dried Oregano - 1tbsp
Turmeric powder - a pinch
Black pepper powder - 1tbsp
Salt
Olive oil

1.In a pan add olive oil and then the chopped garlic.
2.Add onion and saute until golden brown.
3.Then zucchini and then tomatoes.
4.Let it stand for 5mins.
5.Then add the peppers and add little water.
6.After 10mins when when everything is cooked add the dried oregano,cayenne pepper,black pepper powder and salt.
7.Add the cooked chickpea and cook it for about 10mins in medium heat.

Spicy Vegetarian chilli ready !!!

Chickea and Urad Dal Vadai

Ingredients:


Urad Dal - 1 cup Chickpea - 1cup - cooked
Onion - 1
Curry leaves - few
Salt

1. Soak a cup of Urad dal and chickpea for atleast 4hrs.

2. Pressure cook the chickpea for 1 whistle.Grind the dal and cooked chickpea without adding water at all.

3. Add the chopped onion,curry leaves and salt.

4. In a pan add oil and heat it.

5. Take a little of the dal mixture and deep fry them in the oil

Gobi and Chickpea Fry

Ingredients:

Gobi - 2 cups - florets
Chickpea - cooked - 1/2 cup
Onion - 1
Tomato - 1
Chilli and Coriander powder - 1 tbsp each
Garlic - 2 pods
Oil
Salt

1.In a pan add litte oil and then add the garlic pods .
2.After 2mins add the onion and saute till golden brown.
3.Add tomatoes and cook well until mushy.
4.Add chilli and coriander powder.
5.Then add the gobi and mix well.
6.Cover with a lid and let it stand in medium flame for about 10mins.
7.When it is half cooked add salt and chickpea and then cook for another 10mins covered.

Serve with roti or plain rice.

Mixed Beans and Sweet Potato Cutlet

Ingredients:



Sweet Potato - 1
Lima beans - 1/2 cup
Black eyes Beans - 1/2 cup
Onion - 1
Chilli powder - a pinch
Salt
Oil

1.Soak the lima beans and black eyed peas overnight.
2.Cook the beans and sweet potato.
3.Mash everything together and then add the chopped onion and then salt and chilli powder.
4.In a wide pan add little oil and then shallow fry by putting a small ball on the pan and fry both sides.

Raw Banana Poriyal

Ingredients:

Raw Banana - 1
Oil
Coconut - 1/2cup
Mustard
Urad dal
Salt

1.In a vessel add water and let it boil.
2.Cut the raw banana into 2 pieces and put it in the water and let it boil more till it becomes soft.
3.Peel off the skin and then grate the raw banana like carrot.
4.In a pan add little oil and add mustard and urad dal.
5.After it pops up add the grated banana and then fry well.
6.Then add the grated coconut and then keep it low flame for 5mins.


Drumstick Puli Kozhambhu

Puli Kozhambhu is my all time favourite. Since my husband dint want to eat this i was not making it at all. Suddenly he asked me to make this and I made this for lunch.Wow it felt so nice to eat this kozhambhu after a year I suppose.

Ingredients:

Drumstick - 2
Small Onion - 8
Tomato - 2
Tamarind - small ball - soaked in 1 cup water
Chilli and Coriander powder - 1tbsp each
Tumeric powder - a pinch
Garlic - 2
Oil
Salt

1.In a pan add little oil and then add then add the chopped garlic or the full one.
2.Then add onion and saute till golden brown.
3.Add tomato next and cook until its mushy.
4.Add the drumstick and leave it closed for about 5mins.
5.Add tamarind paste with water and salt and let it boil for 2mins.
6.Then add the turmeric,chilli and coriander powder and mix well.
7.If its very thick add more water and keep it in medium flame closed with a lid.
8.Cook it until the drumstick is soft and serve with hot plain rice.

Yummy !!!




Avacado Chutney

A very delicious chutney. This is the second thing am doing with avacado. I made Avacado Roti and now this chutney. I just loved it. That too the chutney i loved it more than the roti. It was creamy and very nice.

Ingredient:

Avacado - 1 - scooped
Tamarind - a pinch
Halabeno Chilli - 1
Jeera - 1tbsp
Mustard
Urad dal
Oil
Salt

1.Grind avacado,tamarind,chilli,salt and jeera to a smooth paste.
2.In a pan add little oil and then the mustard and urad dal and after it pops add it to the grinded paste.
Serve with roti's or idly or dosai. I had with roti and it was great.

Mixed Vegetables in Yogurt Sauce

Ingredients:

Cauliflower - 1cup
Peas - 1/2cup
Carrot - 2
Onion - 1
Tomato - 1
Curd - 1 cup
Chilli powder - 1tbsp
Coriander powder - 1tbsp
Mint - few leaves
Ginger garlic paste - 1tbsp
Oil
Salt

1.In a pan add little oil and saute the onion.
2.After it turns golden brown add the tomatoes.
3.Saute until mushy and then add the vegetables.
4.Add the chilli and coriander powder and mix well.
5.cover will a lid and let it stand until the vegetables are half cooked.
6.Then add the curd and mix well.
7.Cook until the vegetables are fully cooked.

Serve with roti or white rice.

Tapicoa Fry

Ingredients:

Tapicoa- 5
chilli and coriander powder - 1tbsp each
Onion - 1
Salt
Oil

1.In a vessel put the tapicoa and add water and boil it until the tapicoa is cooked.
2.Remove the skin and cut into small pieces.
3.In a pan add oil and then the onion and saute until golden brown.
4.Add the cut tapicoa and then chilli and coriander powder and mix well.
5.Add little more oil and cover for 5mins and mix.
6.Cook until the raw smell is gone.

Kidney Bean and Beet Greans Soup


Ingredients:

Kidney Beans - 1cup ( Soaked and Cooked)
Beet Greens - 1cup
Water - 2cups
Cayenne chilli powder- 1/2tbsp
Garlic - 1
Onion -1
Tomato - 1
Oil
Salt

1.In a pan add oil and add garlic and onion. Saute well until golden brown.
2.Add the tomato and cook until tomato becomes mushy.
3.Then add the beet greens and cook until the greens are half cooked.
4.Add cayenne chilli powder and kidney beans and mash it a little.
5.Add water and let it boil.
6.Reduce the heat and keep it for 3omins and serve hot.

Vegetable Fried Rice


Ingredients:

Cooked Rice - 2cups
Carrot - 2
Bell Peppers - 1( I used Orange)
Sweet Corn - 1/2 cup
Onion - 1
Soya sauce - 1tbsp
Sweet &Sour sauce - 1tbsp
Garlic - 2
Oil
Salt

1.In a pan add oil and then add the garlic and saute for a while.
2.Add bell pepper,carrot and
corn and saute for 5mins.
3.Add soya sauce and sweet&sour sauce.
4.Add salt and let it cook for 5mins.
5.Add the cooked rice and mi
x well.
6.Garnish with spring onions on top( I actually forgot this :D)

Tomatillo Chutney / Dip


Ingredients:

Tomatillo - 3
Small Onion - 6
Tomato - 1
Red chilli - 2
Oil
Salt

1.In a pan add oil and then saute all the above.
2.Cool it and grind it to a smooth paste.

Serve with dosa or idly or can be used as a dip.

Cabbage and Chickpea Sandwich



Ingredients:

Whole Wheat Bread - 2 slices
Cabbage - 1 cup
Chicpeas - 1/2cup cooked
Cayenne pepper powder - 1/4tbsp
Black pepper powder
Salt
Oil

1.In a griddle toast the bread with little oil and keep aside.
2.In a pan add oil and then fry the cabbage for 5mins.
3.Then add then the cayenne powder and mix well for 5mins.
4.Add little salt.
5.In a bowl add chickpeas and then salt and mash them.
6.In a plate place the bread slices and in one slice spread the mashed chickpeas and in another slice spread the cabbage mixture.
7.Slightly sprinkle pepper powder on both slices and keep one slice top of other and have with tomato ketchup.

Sundal



Ingredients:

Chickpeas - 1cup - cooked
Mustard
Urad dal
Asafoedita - a pinch
Red chilli - 1
Oil
Salt

1.Soak the chicpeas overnight and pressure cook it for 1whistle and keep aside.
2.In a pan add little oil and add mustard,urad dal and asafoedita.
3.Then add the red chilli and then the cooked chickpeas.
4.Fry well for 5mins and serve hot.

Strawberry Crumble


Iam sending this to MyKitchen Treasures for the Strawberry Feast.I saw Sunita's mango crumble and I tried it with strawberry. It was yummy.Thanks to Sunita.
Ingredients:

Strawberry - 1cup
Brown Sugar - 1tbsp
Almonds - chopped - 3tbsp
whole wheat bread - 1
Wheat flour - 1tbsp
Oil - 1tbsp

1.Place the strawberry into 2 small bowls covering 3/4th of the bowl.
2.In a bowl mix almonds,flour,oil,sugar and crumble the bread.
3.Mix them and sprinkle the mixture into the bowl of strawberry on top covering the 1/4th part.
4.Pre heat oven to 200Degrees and bake it for about 20mins.


Strawberry Galettes

Ingredients:
Flour - 1cup
Brown Sugar - 2tbsp
Egg yolk or beaters - 1 or 1/2cup
Butter Stick - 1/2
Ice water - as needed

Filling:
Strawberry - 1cup
Raisins - 1/2cup
Sugar - 1tbsp
Cinnamon -1 tbsp

1.Mix the sugar and flour together. Blend in the cold butter and the egg yolk.
2.When the mixture looks like coarse breadcrumbs, add the ice cold water, a spoonful at a time, until the dough is just combined. Divide it into two and let it rest in the freezer for 10 mi
nutes.
3.Mix all the ingredients for filling in a bowl.
4.Roll the dough into a small circle and place the filling in center and fold all the
sides to the filling mixture.

Pre heat the oven to 170Degrees and bake it for 20mins.

Peas and Carrot Dosa


Ingredients:

Dosa Batter - 2cups
Carrot - 1/2cup
Peas - 1/2cup
Chilli and Coriander powder- 1/2tbsp each
Onion - 1
Tomato - 1
Salt
Oil

1.In a pan add little oil and saute onion until golden brown.
2.Add tomato and then Chilli and Coriander powder.
3.Saute well and then add carrot and peas.
4.Cover with a lid and let it stand for 10mins.
5.Cook well and keep aside.
6.In a dosa pan spread the batter and then add the carrot and peas mixture and add oil around the dosa.

Sweet Corn Fried Rice


I had some left over rice since we went out for dinner tonite. So was thinking what to do with it and made this rice. I wanted to make it spicy so I used Habanero chilli. My god it was so nice to eat some really spicy food after a very long time.

Ingredients:

Sweet Corn - 1cup
Rice - 2 Cups
Orange Bell Pepper - 1/2cup chopped
Habanero Chilli - 1
garlic - 1
soya sauce - 1tbsp
Sweet & sour sauce - 1/2tbsp
Salt
Olive oil
Spring onions - chopped

1.In a pan add oil and then add the garlic and saute for a while.
2.Add bell pepper,habanero chilli and corn and saute for 5mins.
3.Add soya sauce and sweet&sour sauce.
4.Add salt and let it cook for 5mins.
5.Add the cooked rice and mix well.
6.Garnish with spring onions on top.

Roasted Potato Rice



Ingredients:

Potato - 1
Cooked Rice - 1cup
Peanuts (fried)- few
Onion - 1
Chilli and Coriander powder - 1/2tbsp each
Oil
Salt

1.In a pan add little oil and saute the onion till golden brown.
2.Cut the potato into small cubes and add them and saute well.
3.Close with a lid and cook until the potato becomes tender.
4.Add chilli and coriander powder and mix well.
5.Add the peanuts also and cook until the raw smell goes and potato is well cooked.
6.Add rice and salt.
7.Mix well.

Roasted Potato,Chickpea and Bell Pepper Rice


I am sending this receipe to AFAM-Bell Peppers event hosted by Priya   and Maheshwari

Ingredients:

Bell pepper - 1/2cup ( Green,Red and Orange) I used all of this.
Chicpeas - 1/2 cup ( cooked)
Potato - 1 (cut into small cubes)
Cooked Rice - 2cups
Onion - 1
chilli powder and coriander powder  - 1/2tbsp each
Turmeric powder - a pinch
Salt
Cashews - few
Salt
Olive oil

1.In a pan add the olive oil. First put the potatoes and fry well. Add little salt,chilli and corainder powder.Just like you make a fry. Let it cook for 5mins or until it becomes tender. Keep aside.
2.Next in the same pan add little more oil and then add the cooked chickpeas and fry well for 5mins.
3.Then add the bell peppers and fry well.Add salt,turmeric,chilli and corainder powder.
4.Let it cook well until the raw smell of the powders go away.
5.Add the cooked rice and mix well. Adjust salt accoringly.

Instead of mixing the potatoes in the rice I garnished the rice with the roasted potatoes and some cashews.
