Peas Thenga Pal Rice

Ingredients:

Peas - 1cup
Rice - 11/2 cups
Onion - 1
ginger garlic paste - 1 tbsp
Green Chilli - 1
Bay leaves - 1
Cloves - 2
Coconut milk - 3cups
Salt
oil

1.In a pan add little oil and add cloves and bay leaves.Grind the onion,chilli and mix with ginger garlic paste.
2.Add the onion paste and fry well.
3.Then add the peas.Fry for few mins.
4.Add the rice and fry for 3mins.
5.Then add the coconut milk.Then  Add salt mix well. 
6.Shift it in a pressure cooker and cook until 3whistles.

Serve hot with any curry you like. We had with Malai Kofta and Cucumber raita.


Carrot Halwa

Ingredients:

Carrot - 1 cup - grated
Ghee - 1tbsp
Condensed Milk - 4tbsp
Almonds - 3

1.In a heavy bottom pan add the carrot and milk. Let it boil for about 10mins.
2.Add the condensed milk and ghee and mix well until it blends well.
3.Let it  boil for more time until all the mixture combines together l
eaving the sides.
4.Serve with some cut almonds on top.

Malai Kofta

Ingredients:

Potatoes - 2
Peas - 1 cup
Panneer - 1/2cup - grated
Tomato - 2
Onion - 1
Chilli - 1
Peanuts - 1/2cup
Ginger & Garlic paste - 1 tbsp
Oil
Salt


1.Cook the peas and potato.
2.Mash the potato and peas and add the grated panneer.Add salt and mix well.
3.Make small balls out of it and keep ready in  a plate.I did not want to deep fry it. I added little oil in  a gridle and fried it with very little oil
4.Fry all the remaining kofta and keep aside.

For Gravy:

1.Grind the onion and ginger garlic paste.
2.Seperately grind the tomato and keep aside.
3.Roast the peanuts if you are using the raw peanuts and make a fine powder out of it.
4.In a pan add little oil and fry the onion paste. Fry until the raw smell goes away.
5.Add the tomato paste. Then the peanut powder. Mix well.
6.Add salt and water if its very thick.Let it boil for 5mins and then add the fried kofta's before serving.


Avacado Roti

Ingredients:

Avacado -  1
Chilli powder - 1 tbsp
Wheat flour - 2 cups
Salt
Oil
Water

1.Scoop the flesh of avacado and mix all the above ingredients and mix well.
2.Mix the dough for roti.
3.Make rotis with it.

It is the first time I tried avacado and it turned out to be well.

Kothimbir Vadi

Ingredients:
1 big bunch of cilantro, washed and finely chopped
chickpea flour - 1 cup 
 rice flour - 1/4 cup
 green chillies - 4-5
 ginger garlic paste - 1 tsp
 garam masala - 1 tsp
 turmeric powder - 1/2 tsp
 asafoetida - a pinch
 lemon juice - 2 tsp
 baking soda - 1/4 tsp
Jeera - 1tbsp
salt to taste
oil for shallow frying

1.Grease a flat bottom vessel with oil.
2.Mix all the ingredients except oil with water to make a thick batter. Do not allow any lumps.
3.Pour into the prepared vessel. Steam cook for 30 minutes. 
4.Cool, unmould and cut into pieces.
Heat oil in a pan and shallow fry the vadis on medium heat till crisp and brown.



Mocha Cookies

Ingredients:

Mocha coffee mix - 1/2cup
All purpose flour - 1cup
Sugar - 1/2cup
Baking soda - a pinch
Baking powder  - a pinch
Butter milk - 1/2cup

1.Mix all the dry ingredients. Make a well and add the butter milk.
2.Mix all and then make small balls and then bake it for 15mins at 250Degrees.


Pizza Pasta Bowl

I wanted to try that new dominos pasta bowl which they have added newly.But there was no home delivery.So thought of trying it on my own.

Ingredients:

Pizza dough - Pillsburry (1)
Penne Pasta - 1cup - cooked
Bell pepper - 1
Carrot -1 
Flour - 1tbsp
Milk -8tbsp
Oil
Salt
Grounded pepper - 1tbsp

1.Cook the pasta as per pack instructions.In a pan add little oil and then fry the pepper and carrot for a while.
2.Shift them to  a corner of the pan and then add more oil and add the flour.Fry for a minute and then add the milk and it will become a creamy paste.
3.Then mix all together and add salt,pasta and black pepper.

Keep aside.

Unroll the dough and put it in a board. Then make a small well in the center and make the edges of the  crust really thick. Add the pasta in the center that is made as a well.

Pre heat the oven to 400 degrees and bake for about 15mins or so.

I did not add any cheese on top. You can add cheese on top and then bake.

Masala Kadalai ( Peanuts) - Microwave Version

Ingredients:

Peanuts - 1 cup
Besan - 1/4cup
Chilli powder - 1tbsp
Salt
Oil - 1tbsp

1.Mix all the ingredients in  a microwave safe bowl.
2.Microwave for 1min and then mix and then microwave for another 2 to 3mins.

Cool and Enjoy this healthy masala kadalai.

Sweet & Sour Veg Noodles

Ingredients:

Maggi Noodles - 1 pack (only noodles)
Bell Pepper - 1
Onion - 1
Sweet & sour sauce - 1 tbsp
Soya sauce - 1/2 tbsp
Sambal Oleak - 1/4 tbsp
Salt
Oil

1.In a vessel boil water and then add the noodles and leave it for a 10mins.
2.In a pan add little oil and then add the onions and saute until golden brown.
3.Then add the peppers, salt and saute well.
4.Add the soya sauce and then then the sweet and sour sauce.
5.Add the sambal oleak and then then cooked noodles and mix well.
6.cook for 5mins and serve hot.


Muttai Kurma

Ingredients:

Egg - 3
Coconut - 3/4cup
Fennel seeds - 1tbsp
Onion - 1
Green chilli -1
Cashews - 4
Cloves
Mustard
Urad dal
Salt
Oil

1.Fry the Coconut,fennel seeds,chilli,onion and cashews in  a pan with litle oil and grind them to a smooth paste.
2.In  a deep pan or vessel add little oil and then add the mustard,urad dal,cloves and fry for 2mins.
3.Add the grinded mixture and let it boil for 3mins.
4.Break the egg into the mixture. Do not mix. Break all the eggs inside and do not mix at all.
5.Break the eggs in such a way that the eggs do not overlap with each other inside.
6.After 5 to 7mins slightly mix the kurma. You can notice that the egg is well cooked and it gets boiled.
7.Let it boil until all the eggs are cooked.

Serve hot with Chappati or Parotta.

Orange and Cantaloupe Juice

Ingredients:

Cantaloupe - 1cup
Fresh Orange - 2
Sugar - 1tbsp

1.Remove the skin of the orange and then grind it well and then strain. Keep aside.
2.Again grind the cantaloupe with little water and then add the orange juice also and grind well with sugar.

Serve cold !!

Panneer and Peas Rice

Ingredients:

Panneer - 1/2cup
Peas - 1/2cup
Cooked Rice - 2cups
Onion
Turmeric powder - 1/4tbsp
Mustard  and Urad Dal - 1/2tbsp each
Salt
Oil

1.Grate the panneer and keep aside.
2.In a pan add oil and then add mustard and urad dal.After it pops add the onion and saute until golden brown.
3.Add the grated panneer and then peas and fry for 5mins.
4.Add turmeric powder and salt.
5.Add the rice and mix well.

Crunchy Banana Cookies

Ingredients:

All purpose flour - 1 cup
Banana -1
Sugar - 1/2cup
Baking soda and powder  - a pinch
Walnuts - 1/2cup

1.Mash the banana in one bowl.
2.Add the dry ingredients in another bowl and mix the mashed banana to it.
3.There was  no need to add any milk or water since the banana had enough water in it to make the cookie.
4.Pre heat oven to 300Degrees and then make small balls of the mixture and bake it for 20mins.

Rava Briyani(Sooji Briyani)

Ingredients:

Rava - 2 cups
Carrot - 1
Cauliflower - 1 cup - florets
Potato - 1
Peas - 1/cup
Onion - 1
Tomato - 1
Garam masala - 1/2 tbsp
Chilli and Coriander powder - 1 tbsp each
Ginger
Garlic
Cloves
Curd - 1/4cup
Mint

1. Cut all the veggies vertically into small pieces.
2. Make a paste of the ginger and garlic.
3. In the cooker add little oil and add the cloves.Then add the ginger garlic paste.
4. Add the onions and saute well. Then add the tomatoes and Mint.
5. Add all the vegetables and cook well. Add the salt.
6. Add all the masala powders and add the curd.
7. Add the sooji and mix well.
8. Add 4 cups of water and check for salt.
9. Cover the cooker and keep 3 whistles.

Serve with Raitha.Garnish with some chopped coriander.



Cucumber Raitha

Ingredients:

cucumber - 1
Coriander - few
Salt
Curd - 1 cup

1.Cut the cucumber into small pieces.
2.Chop the coriander.
3.Mix all the ingredients and chill.

Serve with briyani or chapati.

Maavu Kurma ( Idly Batter Kurma)

I never knew that there is a kurma that can be done with the dosa batter. My husband said make maavu kurma.I asked him what???? And then he said how to make and I made it.

Ingredients:

Idly Batter - 1 cup
Onion - 1
Tomato - 1
Turmeric powder - 1/4tbsp
Salt
Oil
Mustard
Urad dal

1.In a pan add little oil then mustard and Urad dal and saute the onion till golden brown.Add salt and turmeric powder.
2.Then add tomatoes and cook well until its mushy.
3.Add 1 cup water.
4.Add the dosa batter slowly and stir well. Do not allow to form lumps.
5.Keep stirring for 10mins and it will cook well.
6.If its very thick add water and then boil for few mins and serve hot with dosa or idly.

Mutter Panneer Masala

Ingredients:

Pannerr- Fried - 1/2 cup
Peas - 1/2cup
Onion - 1
Tomato - 2
Cashews - 10
Chilli - 1
cinnamon - 1
oil
Salt
Mustard

1. In a pan boil the tomato,onions,chilli,ca
shews and cinnamon stick.
2. Let it get cooked. Make a paste of the mixture and keep aside.
3. Cut the panneer into small cubes. In a pan add little oil and fry the panneer cubes.
4. In a pan heat oil and put mustard.
5. After the mustard splutters add the paste ,salt and then the panneer and peas and cook till the
 raw smell of the paste goes away.

Watermelon Juice

Ingredients:

Water melon - 2cup
Sugar - 1tbsp
Salt- a pinch
Ice cubes

1.Mix all the ingredients except ice cubes and grind .
2.Add the ice cubes and serve cold.

Creamy Cabbage Soup

Ingredients:

Cabbage- 1cup
Milk - 1/2cup(skim milk)
Flour - 1tbsp
Salt
Oil
Black Pepper - 1tbsp

1.In a pan add little oil and then fry the finely chopped cabbage until it is half cooked.Keep aside.
2.In the same pan add more oil and then add the flour and mix well.
3.Add milk and keep stirring without forming any lumps.
4.You can add water if the mixture is very thick.
5.Add salt and then the cabbage.
6.Let it boil for 5mins and then serve with crushed black pepper on top.

Sweet Potato Chutney

Ingredients:

Sweet Potato - 1cup
Onion - 1
Red  chilli - 2
Oil
Mustard-1tbsp
Urad Dal - 1tbsp
Salt

1.Cook the sweet potato and keep aside.
2.In  a pan add little oil and fry the chilli and onion.
3.Then add the sweet potato and fry for 5mins.
4.Let it cool and then grind it to a smooth paste.Add salt.
5.In a pan add oil and then add mustard and urad dal and mix it in the grinded mixture.

Eggless Chocolate Cake

Ingredients:

All purpose flour - 1/2cup
whole Wheat flour - 3/4cup
Cocoa powder - 6tbsp
Butter milk - 1cup
Milk - 3/4cup
Sugar - 1cup
Baking powder - 1tbsp
Baking Soda - 1tbsp

1.Mix all the dry ingredients.
2.Slowly mix all the liquid ingredients.
3.Do not over mix .Mix until it is well blended.
4.Grease a baking dish and then pour the  mixture and bake for 2omins.

For Frosting:

I used the Pudding and Pie filling mix for the frosting.I cooked it as per the pack instructions and then spread it on top and also in the middle of the cake after cutting it. :)..


Vegetable Lasagna

Ingredients:

Mixed Vegetables -3 cups
Cheese - optional
Chilli powder
Tortilla -3
Onion -2
Tomato -2
Milk - 1cup
Flour - 2tbsp
Salt
Black Pepper - 1tbsp
Butter - 1tbsp

Bechamel Sauce:

1.In a pan add the butter.After it melts add the flour and mix well. 
2.Slowly add the milk and mix well  so that no lumps are formed.
3.Keep mixing until it forms a thick mixture.
4.Add the ground pepper and keep aside.

Vegetables:

1.In a pan add the onions and saute until golden brown.
2.Add the tomatoes and saute until it becomes mushy.
3.Add the mixed vegetables and cook well.
4.Add salt and little chilli powder.

1.In a baking pan at the bottom spread the bechamel sauce .
2.Then one tortilla on top of it.
3.Spread a layer of vegetables and then top of it place a tortilla.
4.Then another layer of vegetables and then tortilla.
5.End with vegetables and then sprinkle some cheese on top.

Pre heat the oven to 300Degrees and bake for 20mins.




Chilli Gobi

Ingredients:
Cauliflower - 1 cup - florets
Corn flour - 1/2cup
White flour - 1/2cup
Jalapeno Pepper - 3
garlic - 2 
Sweet chilli sauce
Soya sauce
tomato sauce
Oil

1. Since I dint want to deep fry gobi I baked it.
2. Mix the corn and white flour.Add salt and add little water and make it to a paste.
3.Preheat oven to 200Degress and put the cauliflower florets into the paste. the paste should be thick so that it sticks properly to the gobi.
4. Bake it for 15mins until its cooked.


For Sauce:

1. In a pan add litle oil and cut the garlic  and pepper finely and add it.
2. Saute until golden brown and then add the bell pepper and saute for 2mins.
3. Add all the sauce.
4. Add little of corn flour so that the gravy becomes thick.
5. Add salt and then the baked gobi and mix well.

Beans Usuli

Ingredients:

Beans -2 cups
Channa dal -1 cup
Fennel Seeds - 1 tbsp
Red chilli - 1
Mustard
Oil
Salt

1.Cut the beans into small pieces.Microwave the beans for 5mins.It will be fully cooked.
2.Soak the channa dal for 1hr.
3.Grind the soaked channa dal,fennel and chilli to a coarse mixture without adding water.
4.Microwave the grinded mixture for 4mins.It will be soft and cooked without the raw smell.
5.In a pan add little oil,salt and then mustard.Add the beans and cooked channa dal and mix well.

French Toast

Ingredients:

Whole Wheat Bread - 2 slices
Egg -1
Milk - 1/2cup
Sugar
Butter

1.In a big plate add the milk,egg and sugar.Mix well.
2.In a dosa tawa or a big pan add butter.
3.Dip the bread slices in the egg mixture and put in the tawa.
4.Cook well and turn to other side and cook both sides.

Serve with some fresh fruits.

Onion and Pepper Dosai

Ingredients:

Dosa Batter - 2 cups
Onion - 1
Jalapeno Pepper - 2
Oil

1.Chop the onion and peppers finely.
2.In a dosai tawa add the batter and spread to make a thick round shape.
3.Sprinkle the Onion and peppers on top of it.
4.Add oil on top and sides and cook well.

We had with tomato and peanut thovayal.

Rava Pongal

I generally make pongal in rice.But I dint want to eat rice so thought of making it with rava.

Ingredients:

Rava - 1cup
Moong Dal - 3/4cup
Jeera - 2 tbsp
Black Pepper  - 1 tbsp
Ghee
Cashew - 3
Salt

1.In a  cooker add the rava and moong dal.Add 31/2 cups of water and pressure cook for 3  whistles.
2.In a pan add ghee and then add jeera,pepper and cashwes.
3.Fry for 5mins and then add the mixture to the cooked dal and rava.
4.Add salt and mix well.

The taste was very nice. Today I made this for breakfast.We had it with Coconut Chutney and Sambar.

Kiwi Shake

Ingredients:

Kiwi fruit - 3
Milk - 1 cup
Sugar - 1 tbsp

1.Remove the skin of Kiwi fruit.
2.Grind all the ingredients and serve cold.

The taste was very different and we just loved it.

Beets Green Masiyal

Ingredients:

Beets Green - a bunch
Onion - 1
Curd - 1/2cup
Green chilli - 1
Oil
Salt

1.Grind the curd and green chilli and keep aside.
2.In a pan add little oil and then add the beet green and cook well.
3.Add salt and then the grinded mixture.
4.Mix well and cook for 10mins in low flame.

Coconut Kozhukattai

Ingredients:

Rice Flour - 2 cups
Coconut Scrappings - 1cup
Salt

1.Mix all the ingredients into a dough.
2.Make small dumplings.
3.In one plate of the idly cooker cook for 10mins.

Vegetable Roll

Ingredients:

Tortilla - 2
Carrot - 1/2 cup
Peas - 1/2 cup
Potato - 1
Oil
Salt
Chilli powder- 1 tbsp

1.Pressure cook all the vegetables for 1 whistle.
2.In a pan add all the vegetables and add the chilli powder and salt.
3.Mix well until the raw smell goes away.
4.Heat the tortilla and then spread the vegetable mixture and roll it.

Gobi Panneer Masala

Ingredients:

Cauliflower - 1 cup
Panneer - 1 cup
Onion - 2
Garam Masala - 1 tbsp
Tomatoes - 2
Cashews - 5
Oil
Salt

1.In  a pan add little oil and then fry the panneer cubes and keep aside.
2.In the same pan add onion,tomatoes,garam masala and cashews and fry well.
3.Grind the above and keep aside.
4.Microwave the cauliflower florets for 5mins.
5.Add the grinded mixture in the pan and then the cauliflower and panneer cubes.
6.Let it boil for few mins and serve hot with chappatis.

Peanut Thovayal

Ingredients:

Peanuts - 1 cup
Onion - 1
Red chilli -2
Oil
Salt

1.Fry all the above ingredients.
2.Cool it and then grind it to a thick mixture.

It can be served with Dosai, idly or plain rice.
