Roasted Red Pepper Scones


Ingredients:

1 Red Pepper - Roast in the oven for 10mins in 300Degrees and puree it.
1 Cup - Whole wheat flour
1 tsp - Baking powder
2 tbsp - Extra Virgin Olive oil
Garlic - 4 Cloves( Microwave for 30 sec and grind it with pe
pper)
Rosemary(dry or fresh) - 1tsp
Salt as needed

1. Pre heat oven to 250 Degrees.
2. In a bowl add the flour,baking powder ,salt and rosemary and mix well.
3.In the center make a well and add the add the puree and mix.
4. Form a dough and roll into a circle with 1 cm width.
5.Cut into triangles and bake it for 20 mins.

Cool and Enjoy.

Almond Butter Cookies


After a very longggg time I am back with Almond Butter cookies recipe. I was really really busy with work and also shifting to a new apartment.

Ingredients:

Almond Butter - 2 tblsp
All purpose Flour - 1/2 C
Sugar - 1/3 C
Margarine - 1/2 stick


1. Cream the margarine and sugar in a bowl.
2. Preheat the oven to 300Degrees.
3. Add the flour to the bowl with margarine and sugar.
4. Mix until the mixture is just combined.
5. In a cookie sheet take a small ball and press the ball. With a fork press on top in both directions.
6.Bake for about 20 mins. Make sure you check in the middle.
7.Cool completely and enjoy :).

Onion Tomato Chutney

Sending this yummy chutney to Sreevalli's Spicy Fiery Chutneys..

Ingredients:
Onion - 2
Tomato - 1
Channa Dal - 1/4 cup
Red chilli - 1
Mustard
Oil
Salt
Urad Dal

1. In a pan add little oil and add the channa dal and red chili.
2. Fry until brown. Add the onions and saute well.Then add the tomato
3. Cool it and grind it.
4. In a pan add little oil and add mustard and urad dal.After it pops up add it to the grinded mixture and serve hot with idly or dosai.

Eggless Chocolate Cake

Ingredients:


All Purpose Flour 1/4 cup
Whole Wheat Flour 3/4 cup
Baking Powder 1/2 teaspoon
Baking Soda 1 teaspoon
Unsweetened Cocoa Powder 6 tablespoons
Granulated Sugar 3/4 cup
Unsweetened Applesauce (you could use oil too) 1/2 cup
Milk 1/4 cup
Yogurt 1/4 cup


Preheat the oven to 325F. Lightly grease an 8-inch round cake pan and dust it with cocoa powder.


1.In a large bowl sift together the all purpose flour, whole wheat flour, baking soda, baking powder, cocoa powder and sugar. Make a well.
2.Add all the wet ingredients one by one.
3.With an electric mixer, beat the mixture on low speed for 2-3 minutes until the dry and wet ingredients are well combined. Do not over beat it.
4.Pour the batter in the prepared pan. Tap the pan a couple of times so the batter is spread evenly and there are no air bubbles.And bake it for 25mins.

Frosting:

1. In a medium size bowl add the margarine, ovaltine (powdered sugar) and cocoa powder.

2.Add milk little by little and continue beating the mixture till you get a nice spreadable consistency. I used around 3 tablespoons of milk.

Spread on the cake and I used fresh cream on the sides of the cake too.
