Suliyan Urundai

I am not sure if many people know this. But tamil people will definitely know this simple and delicious dish.Generally my mom makes this on diwali morning as part of the breakfast.I also made this for Diwali.

Ingredients:
Channa dal - cooked - 1cup
Cardamon - 2
Jaggery - 1/2cup
Coconut - 11/4th cup
Maida - 1cup
Ghee - 1tsp
Salt - a pinch
Oil - for deep frying

1.Cook the channa dal in pressure cooker.
2.In a pan add little ghee and then the cardamon and then add the cooked channa dal without any water.
3.Add the jaggery mixture and mix well until the jaggery melts and well mixed with the channa dal.
4.Then add the coconut and leave it for 5mins and allow it to cool.
5.Make small balls of the dal mixture and keep it.
6.In a bowl mix the maida and salt and add water to a thick paste.
8.In a pan add oil for frying.
7.Dip the channa dal in the maida paste and deep fry it.

ICC - August Challenge

It was a very long break. We shifted to chicago and so much work.Just now settled a little bit. So thought I should post the Kolukattai recipe for the Indian Cooking Challenge.

Ingredients:

2 cups freshly grated coconut (can use frozen unsweetened coconut)
1 cup jaggery (grated)
1 tsp cardamom powder
one pinch nutmeg
2 tbsp Milk

1 cup rice flour
1.25 cup water
pinch of salt
1 tbsp oil

1.In a heavy bottom kadai mix all the ingredients for stuffing and let it sit for 15 min. Cook until it starts boiling and stuffing will turn yellowish brown and will be sticky. Take the kadai off the heat. Set it aside to cool down.

2.In a bowl take the rice flour,add little salt and then little by little add hot water. Make sure you mix with spoon as your adding hot water.Make a dough.
3.Take a small ball of the dough. Make a round shape with it and add little stuffing and close all sides of the dough on to the center and make the tip a little sharp. Make the same way for rest of the dough.
4.You can use the idly vessel for steaming the kolukattai.

Rasmalai

For so long I wanted to make and eat this. I just love the smell and taste of rasmalai. That too saffron i love the smell and color. So here is the receipe.

Ingredients:

Milk - 4cups
lemon juice - 1tbsp
Sugar - 1cup
Saffron - few strands
Cardamon - 1
Almonds - 3


1.In a heavy botton vessel add 2 cups of milk and let it boil well.
2.When the milk is boiled well add the lemon juice and mix.
3.Do not stop mixing.The milk will curdle and a thick mixture will form .
4.In a cloth put the mixture and strain all the water.Let it stand for 30mins.
5.In another vessel add water and then the sugar and put the strained panneer. And pressure cook for a whistle.
6.Keep aside.
7.In a heavy botton vessel add 2 cups of milk and let it boil well.
8.Add saffron and let it boil till it becomes one cup.
9.ADd the cardamon also and let itboil for 5mins.
10.Let it cool.
11.Add the pressure cooked panneer and add in the milk mixture and cool it in the refrigirator for an hour and serve. Before serving sprinkle almonds on top and serve.

Rava Laddoo - My 200th Post

Hi All,


Yes it is my 200th post. Its like a dream thinking that I have 2oo posts in my blog. I started this as a time pass and now it has been a part of my life.Its been only 5 to 6 months I started this and already 200 posts now. Feels good !!

So here is my recipe. I am sending this to Srivalli's Indian Cooking Challenge.


Ingredients:
Rava - 1 cup
Sugar - 1/2cup
Ghee - 2 tbsp
Raisins
Cashew - 10
Cardamon -2
Milk - 1/2cup
1.In a small pan add 1tbsp ghee and then add cashews and raisins.Fry until the raisin is fried and bulged.keep aside.
2.Then add the rava and fry until the light brown and do not burn it.Add the remaining ghee and then the cardamon.
3.In a bowl add the sugar,fried cashew and raisin and then the fried sooji.
4Add milk such that you can make a dough like paste.
5.Transfer back to the pan and add very little ghee and let it stand for a min.
Then make the laddoos..

Strawberry Crumble


Iam sending this to MyKitchen Treasures for the Strawberry Feast.I saw Sunita's mango crumble and I tried it with strawberry. It was yummy.Thanks to Sunita.
Ingredients:

Strawberry - 1cup
Brown Sugar - 1tbsp
Almonds - chopped - 3tbsp
whole wheat bread - 1
Wheat flour - 1tbsp
Oil - 1tbsp

1.Place the strawberry into 2 small bowls covering 3/4th of the bowl.
2.In a bowl mix almonds,flour,oil,sugar and crumble the bread.
3.Mix them and sprinkle the mixture into the bowl of strawberry on top covering the 1/4th part.
4.Pre heat oven to 200Degrees and bake it for about 20mins.


Strawberry Galettes

Ingredients:
Flour - 1cup
Brown Sugar - 2tbsp
Egg yolk or beaters - 1 or 1/2cup
Butter Stick - 1/2
Ice water - as needed

Filling:
Strawberry - 1cup
Raisins - 1/2cup
Sugar - 1tbsp
Cinnamon -1 tbsp

1.Mix the sugar and flour together. Blend in the cold butter and the egg yolk.
2.When the mixture looks like coarse breadcrumbs, add the ice cold water, a spoonful at a time, until the dough is just combined. Divide it into two and let it rest in the freezer for 10 mi
nutes.
3.Mix all the ingredients for filling in a bowl.
4.Roll the dough into a small circle and place the filling in center and fold all the
sides to the filling mixture.

Pre heat the oven to 170Degrees and bake it for 20mins.

Carrot Halwa

Ingredients:

Carrot - 1 cup - grated
Ghee - 1tbsp
Condensed Milk - 4tbsp
Almonds - 3

1.In a heavy bottom pan add the carrot and milk. Let it boil for about 10mins.
2.Add the condensed milk and ghee and mix well until it blends well.
3.Let it  boil for more time until all the mixture combines together l
eaving the sides.
4.Serve with some cut almonds on top.

Banana Payasam

Ingredients:

Ripe Bananas - 2
Milk - 1 glass
Saffron - few strands
Cashews - 4

1.Mash the bananas in a bowl.
2.Boil the milk and then add the mashed bananas and let it mix well in the milk.
3.Let it boil for 2mins and then serve hot with saffron and cashews on top.

Adharsam

Ingredients:

Raw rice - 1 cup
Jaggery - 1/2 cup
Salt - a pinch
Oil

1.Soak the raw rice for 2hrs in water.
2.Melt the jaggery in medium heat and let it cool completely.
3.Grind the rice without any water.It needs to be very thick.
4.Add the grinded rice to the jaggery mixture and add a pinch of salt.
5.Keep the mixture over night.
6.In a pan add oil and deep fry by putting a spoon of the mixture.

Milk Peda

My 100th post so wanted to make some sweet :)..Din't ever think I will start a cooking blog and that too 100 posts in just few months. Great !!

Ingredients:

Condensed Milk - 1 can
Curd - 2 tbsp
Elaichi - 2
Ghee - 1 tbsp

1.Mix Condensed milk,curd and elaichi.
2.In a microwave safe bowl keep in microwave for 4mins.
3.Mix and then keep again for 5mins.
4.Cool completely and mix little ghee and make small balls.

Garnish with pista or almonds.

Sakkarai Pongal

Ingredients:

Rice - 1 cup
Channa Dal - 2 tbsp
Ghee - 1 tbsp
Cashews- 5
Jaggery - 1 cup

1. Pressure cook the rice and channa dal together.
2. In a pan add the ghee and fry the cashews and keep aside.
3. Mix well the rice mixture. Add the jaggery to the rice mixture. 
4. Cook the mixture in low flame until the jaggery melts in the rice.
5.Mix well and add the fried cashews and before serving add little ghee on top and serve hot.

Chocolate Fruit Cake

I am so much into baking now  a days..Dont know what has happened to me..Anyways wanted to eat something sweet or not very sweet..So I thought of trying something new and I had grapes lying in the fridge. So wanted to use that as well.so thats how I made this.

Ingredients:

Wheat flour - 2 cups
Baking Powder and Soda - 1/4 tbsp
Brown Sugar- 1/2 cup ( depending on your need)
Fresh Grapes - cut - 1/2 cup
Water
Oil

1. Mix all the dry ingredients first.
2. Add oil and then grapes.
3. Then add the water and do not over mix it.
4.It should be very watery or very thick.
5.Preheat the oven to 300Degrees. Grease a baking pan and shift the contents and bake for 20 to 30 mins.

Cool it completely and then cut it. I dint have patience and cut it before it became cool. :)

I just poured some chocolate syrup on top.

Blueberry and Oat Bar

Ingredients:

Blueberry - 1 cup
Oats - 1/2 cup
Maple sugar syrup - 1 tbsp
Oil

1. Pre heat the oven to 300Degress.
2. Mix all the ingrediets. If the blueberry is frozen keep it in the microwave for 1 min.
3. With a spoon or your hand mix them well.
4. Bake it for 10mins and broil it for 5mins.

Crispy health bar ready !!
