Peanut Rice

Iam sending this to JFI-Peanuts hosted by Pavani of Cook's Hideout, event started by Indira.

Ingredients:

Rice - 2 cups - cooked
Peanuts - 1/2cup
Channa dal and Urad dal - 1tbsp each
Red chillidried - 2
Oil
Mustard - 1tbsp

1.In a pan add little oil and then add urad and channa dal.
2.Then red chilli and fry well.
3.Keep aside.
4.Next fry the peanuts if using raw peanuts and keep aside.
5.Let it cool and then grind all the ingredients together into a coarse mixture.
6.In a wide pan add little oil and then fry some red chillies and mustard and then add little of the peanut mixture. Fry for a while and then add the cooked rice.
Mix well and serve hot !!

Vegetable Fried Rice


Ingredients:

Cooked Rice - 2cups
Carrot - 2
Bell Peppers - 1( I used Orange)
Sweet Corn - 1/2 cup
Onion - 1
Soya sauce - 1tbsp
Sweet &Sour sauce - 1tbsp
Garlic - 2
Oil
Salt

1.In a pan add oil and then add the garlic and saute for a while.
2.Add bell pepper,carrot and
corn and saute for 5mins.
3.Add soya sauce and sweet&sour sauce.
4.Add salt and let it cook for 5mins.
5.Add the cooked rice and mi
x well.
6.Garnish with spring onions on top( I actually forgot this :D)

Sweet Corn Fried Rice


I had some left over rice since we went out for dinner tonite. So was thinking what to do with it and made this rice. I wanted to make it spicy so I used Habanero chilli. My god it was so nice to eat some really spicy food after a very long time.

Ingredients:

Sweet Corn - 1cup
Rice - 2 Cups
Orange Bell Pepper - 1/2cup chopped
Habanero Chilli - 1
garlic - 1
soya sauce - 1tbsp
Sweet & sour sauce - 1/2tbsp
Salt
Olive oil
Spring onions - chopped

1.In a pan add oil and then add the garlic and saute for a while.
2.Add bell pepper,habanero chilli and corn and saute for 5mins.
3.Add soya sauce and sweet&sour sauce.
4.Add salt and let it cook for 5mins.
5.Add the cooked rice and mix well.
6.Garnish with spring onions on top.

Roasted Potato Rice



Ingredients:

Potato - 1
Cooked Rice - 1cup
Peanuts (fried)- few
Onion - 1
Chilli and Coriander powder - 1/2tbsp each
Oil
Salt

1.In a pan add little oil and saute the onion till golden brown.
2.Cut the potato into small cubes and add them and saute well.
3.Close with a lid and cook until the potato becomes tender.
4.Add chilli and coriander powder and mix well.
5.Add the peanuts also and cook until the raw smell goes and potato is well cooked.
6.Add rice and salt.
7.Mix well.

Roasted Potato,Chickpea and Bell Pepper Rice


I am sending this receipe to AFAM-Bell Peppers event hosted by Priya   and Maheshwari 
and Ravishing rice by Nags and Meeta.

Ingredients:

Bell pepper - 1/2cup ( Green,Red and Orange) I used all of this.
Chicpeas - 1/2 cup ( cooked)
Potato - 1 (cut into small cubes)
Cooked Rice - 2cups
Onion - 1
chilli powder and coriander powder  - 1/2tbsp each
Turmeric powder - a pinch
Salt
Cashews - few
Salt
Olive oil

1.In a pan add the olive oil. First put the potatoes and fry well. Add little salt,chilli and corainder powder.Just like you make a fry. Let it cook for 5mins or until it becomes tender. Keep aside.
2.Next in the same pan add little more oil and then add the cooked chickpeas and fry well for 5mins.
3.Then add the bell peppers and fry well.Add salt,turmeric,chilli and corainder powder.
4.Let it cook well until the raw smell of the powders go away.
5.Add the cooked rice and mix well. Adjust salt accoringly.

Instead of mixing the potatoes in the rice I garnished the rice with the roasted potatoes and some cashews.

Vegetable Brown Rice



Ingredients:

Brown Rice - 2 cups
Carrot - 1
Cauliflower - 1 cup - florets
Potato - 1
Peas - 1/cup
Onion - 1
Tomato - 1
Garam masala - 1/2 tbsp
Chilli and Coriander powder - 1 tbsp each
Ginger
Garlic
Cloves
Curd - 1/4cup
Mint

1. Cut all the veggies vertically into small pieces.
2. Make a paste of the ginger and garlic.
3. In the cooker add little oil and add the cloves.Then add the ginger garlic paste.
4. Add the onions and saute well. Then add the tomatoes
 and Mint.
5. Add all the vegetables and cook well. Add the salt.
6. Add all the masala powders and add the curd.
7. Add the rice and mix well.
8. Add 4 cups of water and check for salt.
9. Cover the cooker and keep 3 whistles.

Peas Thenga Pal Rice

Ingredients:

Peas - 1cup
Rice - 11/2 cups
Onion - 1
ginger garlic paste - 1 tbsp
Green Chilli - 1
Bay leaves - 1
Cloves - 2
Coconut milk - 3cups
Salt
oil

1.In a pan add little oil and add cloves and bay leaves.Grind the onion,chilli and mix with ginger garlic paste.
2.Add the onion paste and fry well.
3.Then add the peas.Fry for few mins.
4.Add the rice and fry for 3mins.
5.Then add the coconut milk.Then  Add salt mix well. 
6.Shift it in a pressure cooker and cook until 3whistles.

Serve hot with any curry you like. We had with Malai Kofta and Cucumber raita.

Panneer and Peas Rice

Ingredients:

Panneer - 1/2cup
Peas - 1/2cup
Cooked Rice - 2cups
Onion
Turmeric powder - 1/4tbsp
Mustard  and Urad Dal - 1/2tbsp each
Salt
Oil

1.Grate the panneer and keep aside.
2.In a pan add oil and then add mustard and urad dal.After it pops add the onion and saute until golden brown.
3.Add the grated panneer and then peas and fry for 5mins.
4.Add turmeric powder and salt.
5.Add the rice and mix well.

Tamarind Rice

Ingredients:

Cooked Rice - 1 cup
Tamarind - 1/2 cup
Red Chilli - 2
Turmeric powder - a pinch
Sesame oil - 2 tbsp
Mustard
Urad and Channa dal - 1 tbsp each
Salt

1.Soak the tamarind in water for 10mins.
2.Make a thick paste of it and keep aside.
3.In a pan add 1tbsp of oil and the add the mustard,Urad and Channa dal and Chilli.
4.After the mustard pops up add turmeric powder and mix well.
5.Add the tamarind paste to the mixture and salt and let it boil for 10mins.
6.You will notice that the oil will come to the sides of the pan. So now it is ready.
7.Mix the tamarind paste with the cooked rice and add the remaining sesame oil and serve hot.

Bisibela Bath

Ingredients:

Rice - 1 cup
Toor Dal - 1/2 cup
Carrot - 1
Cabbage- 1 cup
Beans - 1 cup
Onion - 1
Tomato - 1
Salt
Oil


Coriander seeds - 2 tbsp
Fenugreek - 1/2tbsp
Red chilli - 2

1.Fry the above three and make grind it into powder.
2. In a cooker add little oil and then saute the onions and tomato.
3.Add all the vegetables and add salt.
4.Add the powdered mixture and add rice and dal.
5.Pressure cook for 3 whistle and hot hot bisebela bath ready !!

Edameme in Brown Rice

Ingredients:

Edameme- 1cup
Brown rice - 1 cup
Onion-1
Tomato - 1
Garlic- 1
Chilli powder & garam masala - 1 tbsp each
Salt
Oil

1.In  a pan add little oil and fry the garlic.
2.Add the onions and saute till golden brown.
3.Add tomatoes and cook well.
4.Add salt,Chilli powder & garam masala and mix well.
5.Add the brown rice and edameme and fry some 5mins.
6.Add 2cups of water and cook well until the rice it well cooked.

Variety Rice


Coconut Rice:

Coconut - 1/2 cup
Cooked Rice -1 1/2 cups
Urad and Channa  Dal - 1tbsp each
Mustard
Garlic
Oil
Salt
Cashews - 4

1. In a pan add little oil and then add garlic and fry until little brown.
2. Add the mustard,Urad and Channa  Dal.
3. After it pops add the coconut scrappings and dry well. 
4.It will become light brown then add the cooked rice and add salt.
5. Mix well until it blends well with all the coconut.

Tomato Rice:

Cooked Rice - 1 cup

Mix the tomato Curry with the cooked rice.

Curd Rice

Curd - 1/2 cup
Cooked Rice - 1 cup
Oil
Mustard
Urad Dal

1. In  a pan add little oil and add the mustard and urad dal.
2. In a bowl add the rice and curd and salt. Mix well and add the mustard and urad dal.
3. Mix well.


Bell Pepper Rice:

Bell Pepper  - 1
Cooked Rice - 1 cup
Onion
Soya sauce - 1/2 tbsp
Oil
Salt

1. In a pan add little oil and then saute the onion till golden brown.
2. Then add the peppers and fry well.
3.Add the soya sauce and mix well.
4.Add salt. Then add the rice and mix well.

Jeera Rice with Soya Chunks Kurma

I had some rice left and dint want to eat curd.So I thought of making jeera rice with it.

Ingredients:

Cooked Rice - 2 cups
Jeera - 1 tbsp
Ghee
Salt

1. In a pan add the ghee.After it melts add the jeera to it.
2. After it pops add the cooked rice and mix well.
3. Add salt and serve.

It is a very simple rice variety and tastes good as well.

Kurma:

Soya chunks- 10
Onion - 1
tomato - 1
Almonds - 5
Salt
Garam Masala
Salt
Oil
Ginger Garlic paste - 1 tbsp

1. Boil water in a pan and add the soya chunks to it.
2. Let it boil for 5mins and then squeeze excess water from the chunks and wash well in cold water.
3. Now for the gravy add the onion,tomato,ginger garlic paste and almonds in a pan and fry well. Saute it until tomatoes become mushy. Add the grama masala as well.
4. Cool it and grind the above to a smooth paste.
5. In  a pan add litle oil and fry the soya chunks for 2mins and then add the grinded mixture. 
6.Add little water and let it mix well for 5mins.

I had it with Jeera rice and it was lovely.

Carrot Rice with Panneer butter Masala

Ingredients:

Rice - 1/2 cups
Carrot - 1 cup 
Onion - 1
Chilli powder - 1 tbsp
Jeera- 1/2tbsp
Oil
Salt
Ghee

1. Cut the carrot into small slices vertically.
2. In a pan add little oil and add the jeera.
3. Add onions and saute well.
4. Then add the carrot and then chilli powder.
5. Add salt and then the rice and mix well.
6. Transfer the contents to the cooker and add 3cups of water.
7.Keep for 3 whistles. Before serving add little ghee.


Panner Butter Masala:
Ingredients:

Pannerr- Fried - 1/2 cup
Onion - 1
Tomato - 2
Cashews - 10
Chilli - 1
cinnamon - 1
oil
Salt
Mustard

1. In a pan boil the tomato,onions,chilli,cashews and cinnamon stick.
2. Let it get cooked. Make a paste of the mixture and keep aside.
3. Cut the panneer into small cubes. In a pan add little oil and fry the panneer cubes.
4. In a pan heat oil and put mustard.
5. After the mustard splutters add the paste ,salt and then the panneer and cook till the
 raw smell of the paste goes away.

Egg quesadilla

I was bored of eating the same style briyani so i decided to make something different.
For Making Omlet:
Egg - 2
Onion - 1
Tomato - 1
Chilli Powder - 1/2 tbsp
Turmeric powder - a pinch
Salt
Pepper Powder 
Oil
1. Cut the onions and tomato.
2. Beat the egg. Add salt,chil
li and turmeric powder and mix well.
3. Add the onion and tomato and mix.
4. Heat a pan and add little oil and pour the mixture and coo
k well.
5. After 2mins turn the omlet and add pepper powder to the other side to cook it.

For Briyani:
Rice - 2 cups
Carrot - 1
Cauliflower - 1 cup - florets
Potato - 1
Peas - 1/cup
Onion - 1
Tomato - 1
Garam masala - 1/2 tbsp
Chilli and Coriander powder - 1 tbsp each
Ginger
Garlic
Cloves
Curd - 1/4cup
Mint

1. Cut all the veggies vertically into small pieces.
2. Make a paste of the ginger and garlic.
3. In the cooker add little oil and add the cloves.Then add the ginger garlic paste.
4. Add the onions and saute well. Then add the tomatoes and Mint.
5. Add all the vegetables and cook well. Add the salt.
6. Add all the masala powders and add the curd.
7. Add the rice and mix well.
8. Add 4 cups of water and check for salt.
9. Cover the cooker and keep 3 whistles.

Take little briyani and spread it over the omlet. Close one side of the omlet and cut into 4 halves. At the top I added some sweet chilli sauce.

Peas Pulav with Vegetable Kurma

Ingredients:

Peas - 1/2 cup
Rice - 1 cup
Onion - 1
milk - 1 cup
Ginger,garlic paste - 1 tbsp
Jeera 
Ghee - 1 tbsp
Cashews
Salt

1. In the cooker add half the amount of ghee and add the onions and saute until golden brown.Then the ginger garlic paste.
2. Add salt and then peas and mix well.
3. Add the washed rice to it.
4.Add 1 cup milk and 1 cup water.
5. Close the cooker and cook for 3 whistles.
6. In a small pan add the remaining ghee and add jeera and mix it with the cooked rice.

I  added jeera at the last because i wanted it to be crispy and not soaked in the rice.


Kurma:

Potato - 1
Carrot - 1
Cauliflower 
Rajma beans - 1/4 cup
Onion - 1
Tomato - 1
Garlic- 3
Ginger
Coconut
Chilli powder - 1/2 tbsp
Fennel seeds

1. Grind coconut,Half onion,tomato,chilli powder,fennel seeds,ginger and ga
rlic and keep aside.
2. Pressure cook all the vegetables in a cooker for 1 whistle.
3. In a pan add little oil and saute the onion.
4. Add the grimded mixture and the veggies and add little water it the paste is very thick.
5. Cook until the vegetables are blended well with the gravy.

Serve hot with rice !!

Ingredients:

Rice - 2 cups

Chilli and Coriander powder - 1 tbsp each
Ginger
Garlic

Curd - 1/4cup

Brown Rice with Vegetables

Ingredients:

 Brown Rice - 1 cup
Cauliflower - 1/2 cup
Beans & Carrot - 1/2 cup
Beans - 1/2 cup
Chilli Powder - 1 tbsp
Coriander powder - 1 tbsp
Green Onions - Chopped
Onion - 1
Tomatoes - 1

1. Add oil in a pan and add the onions and tomatoes and saute it.
2. Add the veggies and mix well.
3. Add little chilli powder and coriander powder.
4. Saute well and add the brown rice and cook well. 
5. Add water and cook well.
6. Add the chopped green onions.

Lemon Rice


Ingredients:
 
cooked rice - 2 cups
Lemon juice - 1/2 cup
Onion - 1
Turmeric powder - 1/2 tbsp
Channa dal
Urad dal
Peanuts
Mustard
Salt
Oil

Procedure:

1. Heat a pan with little oil.
2. Add mustard,urad dal, peanuts and channa dal.
3. After it turns golden brown add the onions and saute them.
4. Add the turmeric powder ,salt and lemon juice.
5.After the raw smell goes away add the cooked rice and make sure it is mixed well .

Can add some red chillies if you want them to be little spicy.
