Channa and Brussel Sprouts Fry

Ingredients:

Channa - cooked - 1cup
Brussel Sprouts - 1cup
Jeera - 1tbsp
Cayenne - 1tsp
Onion - 1
Tomato - 1
Garlic - 2
Salt
Olive oil

1.In a pan add olive oil and then jeera.
2.Then add the garlic and onion.
3.Saute till golden brown and then add the tomato.
4.Mix well and cook until the tomato is mushy.
5.Add the cayenne and salt.
6.Add channa and brussel sprouts and mix well.
7.Add little water and cook until the sprouts are cooked well.

Serve with Roti or plain rice.

Gobi and Chickpea Fry

Ingredients:

Gobi - 2 cups - florets
Chickpea - cooked - 1/2 cup
Onion - 1
Tomato - 1
Chilli and Coriander powder - 1 tbsp each
Garlic - 2 pods
Oil
Salt

1.In a pan add litte oil and then add the garlic pods .
2.After 2mins add the onion and saute till golden brown.
3.Add tomatoes and cook well until mushy.
4.Add chilli and coriander powder.
5.Then add the gobi and mix well.
6.Cover with a lid and let it stand in medium flame for about 10mins.
7.When it is half cooked add salt and chickpea and then cook for another 10mins covered.

Serve with roti or plain rice.

Tapicoa Fry

Ingredients:

Tapicoa- 5
chilli and coriander powder - 1tbsp each
Onion - 1
Salt
Oil

1.In a vessel put the tapicoa and add water and boil it until the tapicoa is cooked.
2.Remove the skin and cut into small pieces.
3.In a pan add oil and then the onion and saute until golden brown.
4.Add the cut tapicoa and then chilli and coriander powder and mix well.
5.Add little more oil and cover for 5mins and mix.
6.Cook until the raw smell is gone.

Chilli Gobi

Ingredients:
Cauliflower - 1 cup - florets
Corn flour - 1/2cup
White flour - 1/2cup
Jalapeno Pepper - 3
garlic - 2 
Sweet chilli sauce
Soya sauce
tomato sauce
Oil

1. Since I dint want to deep fry gobi I baked it.
2. Mix the corn and white flour.Add salt and add little water and make it to a paste.
3.Preheat oven to 200Degress and put the cauliflower florets into the paste. the paste should be thick so that it sticks properly to the gobi.
4. Bake it for 15mins until its cooked.


For Sauce:

1. In a pan add litle oil and cut the garlic  and pepper finely and add it.
2. Saute until golden brown and then add the bell pepper and saute for 2mins.
3. Add all the sauce.
4. Add little of corn flour so that the gravy becomes thick.
5. Add salt and then the baked gobi and mix well.

Soya and Potato Fry

Ingredients:

Potato - 2
Soya chunks - 15
Onion - 1
Tomato - 1
Chilli and Coriander Powder - 1 tbsp each
Ginger and Garlic paste - 1 tbsp
Oil
Salt

1.In 2 cups of water add the soya chunks and let the water boil for 10mins.
2.Add them in cold water and squeeze the water and repeat it 2times.
3.In a pan add little oil and saute the onion till golden brown.
4.Add tomato and cook until mushy.
5.Add chilli,coriander powder and salt and mix well.
6.Add potato and cook well.
7.After the potato becomes soft add the soya chunks and cook for another 5mins.

Aloo Gobi Fry

Ingredients:
Cauli Flower- 1 cup
Potato - 1
Ginger Garlic paste - 1 tbsp
Onion - 1
Tomato - 1
Salt
Oil
1. Cut the Cauliflower into florets and potato and microwave for 4mins.
2. In a pan heat little oil and add the onions ginger garlic paste and saute till golden brown.
3. Add the tomatoes and salt and cook well .
4. Add the cooked vegetables and mix well.
5. Cook until the raw smell goes.

Potato Fry

Ingredients:

Potato - 2
Chilli and Coriander Powder - 1 tbsp each
Salt
Mustard
Urad dal
Oil

1. Cut the potatos into small pieces.
2.In a pan add oil and add the mustard and urad dal.
3.After it pops add the potato and salt and mix well.
4. Close with a lid and cook in low flame for 5mins.
5.It will be half cooked and then add the chili and coriander powder and mix well.
6.Again close with the lid and leave it for 10mins in low flame.

Sunday Special

Today we had plans to go out and eat but it was raining heavily so could not go out. So I started to cook and was thinking wat to make. Thought of making a different kind of a starter with sweet potato and did the veggie patties. Then made pasta for me and my hubby as usual ate sambar rice.
Generally we add potatoes but for a change i used sweet potato. It was very nice.

Veg Patties:
Ingredients:

Sweet potato - cooked - 1/2 cup
Carrot,Peas,cauliflower - cooked - 1 cup
Salt
Oil
Flour

1. Mash all the veggies and mix them well with salt.
2. Make small balls out of the mixture.
3. In  a plate put some flour and dip the small balls and keep it.
4. In a skillet add some oil and heat it.
5. Put one by one the floured veg balls and fry them. I dint want to deep fry the vegies. So i used a skillet and added little oil around it and fried.
6. Fry them until golden brown and serve them with tomato sauce.
It was yummy..We both liked it very much.

Pasta:
  I had plenty of the veggie mixture.so what i did is i used them for my pasta. 

Ingredients:
Flour - 1tbsp
Pasta - whole wheat
oil
Salt
Milk - non fat(can use of your choice) - 8tbsp

1.Cook the pasta as per the pack instructions.
2.Heat a pan and add little oil
3. Add the flour and keep stirring.
4. Add the milk slowly so that no lumps are formed.
5. Keep stirring until it becomes thick.
6. Add the veggie mixture and mix well.
7. Add the cooked pasta and mix evenly so that the gravy is blended 
all over the pasta.
8. Cook for another 5mins in low heat.

Your creamy pasta is ready !!


Brocolli Pepper Fry:

Brocolli - 1 cup
Black Pepper - 1 tbsp
Onion - 1
Tomato - 1
Salt
Oil
1. Cut the brocolli into florets and microwave for 4mins.
2. In a pan heat little oil and add the onions and saute till golden brown.
3. Add the tomatoes and salt and cook well .
4. Add the cooked brocolli and mix well.
5. Add the grounded black peper and cook until the raw smell goes.

Carrot Poriyal :
 Ingredients:

Carrot - 2cups - Grated
Onion - 1
Mustard
Urad Dal
Coconut Scrapping - 1/2 cup

1. Grate the carrot.
2. Heat the oil in a pan and add the mustard and urad dal.
3. Add the onions to the pan
 and saute till golden brown.
4. Add the grated carrot to the
 pan. 
5. Cook it for few minutes 
and add the coconut scrap
pings and mix well.

Bitter Gourd Fry

Many people dont like bitter gourd,but I just love it.


Ingredients:


Bitter Gourd - 1 cup - chopped into small pieces

Onion - 1

Tomato - 1

Chilli Powder - 1 tbsp

Coriander powder - 1 tbsp

Sugar - 1/2 tbsp

Salt

Oil


1. Add oil in a pan and then add the onions and saute till golden brown.

2. Add the chopped bitter gourd and fry until the raw smell goes away. If you add the tomato before doing this it will take lot of time for the bitter gourd to cook. So add the bitter gourd and then add the tomatoes.

3. Add the tomatoes ,salt,chilli and coriander powder.

4. Cook until it is well mixed and the smell of chilli and coriander powder is gone.

5. Last minute add the sugar and mix well.

Kovakkai Fry

Kovakkai is my favourite but I havent tried cooking it that much. I saw them in the Indian stores and thought of making a fry. SO here it is.

Ingredients:

Kovakkai 
Onion - 1/2

For grinding:

Channa dal - 1tbsp 
Urad Dal - 1 tbsp
Peanuts - 3 tbsp

1. Fry the ingredients for grinding for few mins.
2. Grind the mixture and keep aside.
3. Cut the kovakkai into thin verticals.
4. Heat oil in a pan and add the kovakkai into the pan and fry it for 5mins till its cooked.
5. Add the grinded mixture to the pan and cook until the veggie is cooked.

Serve Hot !!!

Raw Banana Fry

Ingredients:
Raw Banana - 1
Chilli Powder - 1/2 tbsp
Coriander Powder - 2/2 tbsp
Mustard
Urad Dal
Oil
Salt

1. Peel the skin and cut the raw banana into small slices. It need not be very thin. A medium size will do.
2. Mix the slices with salt,chilli and coriander powder and keep it aside.
3. In a pan add enough oil and put mustard and urad dal.
4. Put the raw banana with all the spices into the pan.
5. Keep frying until it is cooked.
6. If you want it to be crispy then you can add more oil and fry it well.

Here is the spicy raw banana fry which I love.

Vegetable Stir Fry

If you are person who likes vegetables then am sure you would like this.

Ingredients:

Brocoli
Cauliflower
Carrot
Chilli powder - 1 tbsp
Garlic - 2 cloves
Ginger
Tomato - 1
Onion - 1
Soya sauce - 1tsbp
Oil
Salt

1. Cut the brocoli and cauliflower into small florets.
2. Cut the carrot vertically into small cubes.
3. Heat the pan with little oil.
4. Add the ginger and garlic.
5. saute them until golden brown. Add the onions and tomato and fry them until cooked.
6. The vegetables can also be microwaved for 5 mins so that it is cooked. Else it can be added just like that and then be cooked in the pan.
7. Add the vegetables and then the chilli powder and soya sauce.
8. cook in medium heat till the raw smell of chilli powder goes and the vegetables are cooked. Do not over cook the veggies. Let them be half cooked.


Hot and spicy vegetables stir fry is ready which can be served hot with cooked brown rice or if you want can add cooked pasta as well and stir it in the vegetables.



Okra Fry ( Bhindi or Vendakai)

Okra has been my all time favourite. I just love it when it is fried.So here is how i do a okra fry.

Ingredients:

Okra - Depending on how much you want.
Coriander powder - 1 tbsp
Chilli powder - 1/2 tbsp
Turmeric powder - little
Salt
Oil

1. Cut the okra into small cubes.
2. Add oil in a pan and put some mustard and urad dal.
3. Add the chopped okra into the pan.
4. Add salt and keep frying until the stickiness of the okra goes away.
5. Now add all the powders. Fry untill the raw smell of the powders go away.

Ready to eat with any rice or with chappati.
