Stuffed Cabbage




This is the first time I am sending any receipe for any event.:).Just trying out.Iam sending this to RCI Pondichery cuisine conducted by Lakshmi of Veggie Cuisine.

Ingredients:

Cabbage - 1
Carrot - 2
Brocolli - 1
Onion - 1
Cooked Rice - 1 cup
Ginger garlic paste - 1tbsp
Chilli powder-1 tbsp
Olive oil
Salt

1.In a big pot add water and let it boil. Put the Cabbage inside it and leave it to boil for 10mins.
2.After it becomes soft switch off the stove and peel the outer leaves carefully and keep aside.
3.To prepare the stuffing in a pan add little olive oil and then add the ginger garlic paste and then saute the onion for a while.
4.Cut the carrot and brocolli and mix well in the pan.
5.Add chilli powder and then cook until the raw smell goes away.
6.Add the cooked rice and mix well.
7.Take a leaf of cabbage and make a small ball of the stuffing and keep it in center of the leaves and roll it tight.Remove the thick stem if it is there before stuffing.
8.Pre heat the oven to 300Degress and bake it for 30mins.


For the tangy tomato sauce:

Tomato - 1
Sun dried Tomatoes - 8
Garlic - 2
Salt

1.In a pan add all the above and saute for a while.
2.Grind the above to a coarse mixture.
3.Shift that to a pan and add salt and water and let it boil for 5mins and keep aside.

In a plate place the baked stuffed cabbage  and then add the tangy tomato sauce on top.

I had some cooked soya beans so just sprinkled some on top and some cucumbers and lettuce.

Baked Grits

Ingredients:

Grits - 2 cups
Mixed Vegetables - 1 cup
Chilli powder - 1 tbsp
Cheese 
Oil
Egg White  - 1/2 cup
Salt


1.In a pan add add little oil and fry the vegetables for a min.
2.Add salt and chilli powder.
3.Cook the grits with 3cups of water.
4.Mix all the ingredients in a baking pan and add little cheese on top and bake for 20mins.

Peanut Butter Cookies

Ingredients:

Peanut Butter - 1 cup
All purpose Flour - 1 cup
Brown sugar - 1/2 cup
Baking powder - a pinch
Butter milk - 3tbsp

1. Mix all the dry ingredients.
2.Microwave the peanut butter if its very hard.
3.Add the peanut butter and butter milk to the dry ingredients.
4.Make it to a dough.
5.Make small balls of it and bake it for 30mins in 200Degrees.

Baked Vegetables

Ingredients:

Asaparagus- 3
Carrot - 2
Potato - 1
Chilli powder - 1 tbsp
Olive oil - 1 tbsp
Salt
Dried Oregano and Parsley 

1. Cut all the vegetables and mix well with all the ingredients and bake for 20mins in 300Degress.

Kuli Paniyaram

I dint have a paniyaram pan so made them in muffin pan :).

Ingredients:

Idly Batter - 2 cups
Onion - 1
Mustard
Urad dal
Salt
Oil

1.In a pan add little oil and add mustard and urad dal.
2.After it pops add the onion and salt.
3.Saute till golden brown.
4.Add it to the idly batter
5.Grease the muffin pan and add the batter.
6.Bake it for 20 mins in 250Degrees.

I added brown sugar in some and made sweet paniyaram in a similar way.

Baked Panneer

Ingredients:

Panneer - 1 cup - cut into squares
Chilli Powder - 1/2 tbsp
Coriander Powder - 1/2 tbsp
Lemon juice
Salt
Oil

1. Cut the pannerr into squares.
2. Mix all the mentioned ingredients and cover it for 20mins.
3. Preheat the oven to 200Degrees and bake it for 15mins.
